The Stone of Air is a lore item. It does not have any use other than as a keepsake for completing the main quest in the desert region.
According to the lore, the stone is broken in order to gain access to the Dusted Castle. This does not alter the item in any way.

Quest Lore[]
The Stone of Air is given to the Dust Warrior at the end of Gansu Watering Hole main quest 8: Dust to Dust. According to Wynfri of Water:
- I found it in the water ceremony, lost in a distant past. For some reason I feel it being pulled toward you, so I was able to grab it on the way back. Who am I to contradict it?
It is then mentioned by the Dust Warrior in the cutscene at the beginning of City of Light main quest 16: Prepare to Attack:
- I have the stones you’re talking about, actually. Stones of Air, of Water, and of the Forest… but I don’t know how to use them, or really want to hand them over. There has to be another way.
It is mentioned again by Azadi in the cutscene at the beginning of Dusted Castle main quest 1: Prepare to Attack:
- We need to break the Stone of Air while we’re underwater, and Lodo will need to keep pushing it forward so we can breathe the entire time we’re in there.
